Appalachian Eats – Pardee Hospital’s Healthy Cooking show

We filmed a pilot healthy cooking TV show for Pardee Hospital last night called “Appalachian Eats” up at Grand Highlands on Bearwallow Mountain.

The premise is how to cook local foods, purchased locally in a healthy/health conscious way.

We are using local food from farmers markets and the chefs are also local. Starr Teel from Hubba Hubba did the pilot episode which was hosted by Ariel Glassman.

We will be presenting the show to Public Television and some other networks, the show is being filmed by The Obsidian Collective. Stay tuned for updates! Here are some stills from the filming.

Tanner Geis to provide cooking demonstration

Tanner Geis

Tanner Geis, South Central gold medalist and national bronze medalist for Young Chef Rotisseur, will provide a cooking demonstration at the Pardee Health Education Center on Friday, Aug. 13 from 1 until 2:30 p.m. The cost is $5 per person and registration is required by calling 1-866-790- WELL (9355). Geis will be demonstrating what can be done with the abundance of summer fruit.  He will be using his own healthy recipes to show that there is more to fruit than pies and cobblers.  Geis, who appeared on the Food Network, has been a chef at many local dining establishments including the Richmond Hill Inn, the Woodfield Inn and the Bistro at Biltmore Estate.  Registration is required and space is limited for this cooking demonstration.

John Pirrello Cooking Demonstration

John Pirrello, local chef at Frankie Bones Restaurant & Lounge in Asheville, presented a cooking demo at the Pardee Health Education Center on Wednesday, June 30, to a crowd of 100 guests.  John’s recipes were designed to showcase healthy ways of cooking the foods we traditionally consider unhealthy.  Recipes included a pineapple gravy over grilled chicken and cream sauce over rice pasta.  The participants were able to sample and enjoy both recipes.  Check out the photos of John’s cooking demonstration!

Chris Smith cooking demonstration a success

Chris Smith, “The Diabetic Chef”, was at the Pardee Health Education Center on Friday, June 3 for a cooking demonstration focusing on preparing and purchasing foods for individuals with diabetes and their families. Chris showcased three recipes and demonstrated how to prepare these recipes from start to finish. Recipes included simple chicken, seared and baked in the oven, maple carrots, and Chris’s own version of strawberry shortcake made with fresh strawberries and toasted angel food cake croûtons for dessert. The audience of nearly 50 participants were able to purchase a Chris Smith cookbook and have it signed by the author after the cooking event.

Be sure to register for our next cooking demonstration. John Pirrello, chef at Frankie Bones Restaurant & Lounge in Asheville, will be at the Pardee Health Education Center on Wednesday, June 30 from 12:30 – 2:30 p.m.  John will be showing participants how to cook some of our favorite foods traditionally known as “unhealthy” in a healthy fashion. “The Diabetic Chef” Coming to Pardee

Chef Chris Smith, author of  the Diabetic Chef’s Year Round Cookbook along with Cooking with The Diabetic Chef, both published by the American Diabetes Association, will be coming to the Pardee Health Education Center for a cooking demo on Friday, June 4 from 2 until 4 p.m.

Chris has over 20 years experience in the culinary field. Focusing on healthy cuisine, Chris is an authority on diabetic nutrition and food preparation.  He has been featured in USA Today, CNN, Web MD, and Southern Living magazines.  National television appearances include DLIFE and Taking Control of Your Diabetes.

Currently, Chris is working as a researcher with Wake Forest University, in the development of lifestyle skills and applications. “Cooking with Chef Chris” public radio program is currently in production.  He is the Chef for Team Type I as they compete in the 2010 RAAM  Race or “Race across America.” Chris also rides and is currently training for the JDRF “Ride to Cure Diabetes” in Death Valley, CA held this fall.

Chris Smith is a nationally recognized author, public speaker and spokesperson for all people affected with diabetes.  He travels the country speaking on the benefits of healthy eating not only for people affected with diabetes, but for anyone who would like to eat and live a healthy lifestyle.
